Ingredients
- 200 g Spam, sliced
- 200 g sausage, sliced
- 150 g kimchi, chopped
- 200 g baked beans
- 100 g tofu, sliced
- 1 pack instant ramen noodles
- 2 tbsp gochujang
- 1 tbsp gochugaru (Korean chili flakes)
- 1 tbsp soy sauce
- 2 cups stock
- 2 scallions, chopped
Instructions
- 1Arrange the Spam, sausage, kimchi, tofu and baked beans in a wide shallow pot.
- 2In a bowl, mix the gochujang, gochugaru, soy sauce and stock, then pour it over the ingredients.
- 3Bring to a boil and simmer for 10 minutes until everything is hot and the flavors meld.
- 4Add the ramen noodles and cook for 3-4 minutes until soft.
- 5Top with scallions and serve bubbling hot from the pot, with extra rice if you like.
Tips
- The mix of gochujang and gochugaru gives the stew its signature spicy-sweet depth.
- Add the noodles near the end so they don't turn mushy.
- Top up with more stock as you eat if the broth reduces too much.
